Creamy Vegetable Orzo

This post is dedicated to my sister, a faithful follower of Mrs. Faircloth.

1Tbsp. olive oil
1onion, chopped
1greeen bell pepper, chopped
1 cup corn (frozen or fresh)
3/4 cup Orzo pasta
14 1/2 oz chicken broth
1/2 cup chive and onion cream cheese (reduced fat)

Heat oil on medium heat in a large skillet.  Add onion, cook 4 min.  Stir in pepper and corn, cook and stir 2 min.  Add orzo, cook and stir 1 min.

Stir in broth, bring to a boil on high heat.  Let simmer for 10min or until orzo and veggies are tender and most of the liquid is absorbed.

Add cream cheese, allow cheese to melt and stir until sauce is well blended.

    Not bad for you at all...I plugged it into recipe builder.

    6 points plus if you use 8 tbsp of cream cheese and split the dish into 4ths :)

    So...You also get to eat a lot of it!
